Before soup season starts, here are two salads I couldn’t get enough of this summer.
You get two kinds of people in this world – a salad eater and a non-salad eater. I like to say I’m a bit of both. I find salads can be boring, bland and just not satisfying. But if a salad is crispy, tasty and just bursting with deliciousness, then I am a salad eater through and through.
In an effort to make healthier decisions this year, I have had these two salads on heavy rotation. They are both easy to make, and I often have all of the ingredients on hand.
GREEK-ISH SALAD
what you need:
- lettuce
- cucumber
- tomato
- feta cheese cubes
- olives
what to do:
Chop the lettuce. Peel and dice the cucumber. Chop the tomato. Combine everything in a bowl. Add the feta cheese cubes and olives. I like to chop up the olives so it mixes in.
salad dressing:
I use olive oil, balsamic vinegar and salt and pepper. Sometimes I’ll just use lemon juice.
ITALIAN-ISH SALAD
what you need:
- lettuce
- cucumber
- tomato
- mozzarella cheese
- pickled cucumbers
what to do:
Chop the lettuce. Peel and dice the cucumber. Chop the tomato. Combine everything in a bowl. Add the mozzarella cheese and the pickled cucumbers. I like to use Israeli pickled cucumbers (the Beit Hashita one’s from my local Spar) and I chop them into little cubes.
salad dressing:
I use the juice of the Israeli pickled cucumbers and a little bit of salt and pepper. You can use any brand of pickled cucumbers, they’re all generally sourish and tasty.
