Recipe for my famous chicken noodle soup

The other day I posted on Instastories that I was making a huge pot of my very famous chicken noodle soup. When I say it is famous, it’s because I get asked by a family member or a friend to make it all the time. I received an overwhelming influx of messages on Instagram asking for the recipe for my famous chicken noodle soup. So, in these times, where soup is definitely very comforting, I’m going to share the recipe with you. Don’t forget they say chicken soup is good for the soul and we could all do with that right now.

What you need:

  • 1 onion – diced
  • 3 carrots – diced
  • small packet of mixed butternut and pumpkin – diced
  • 4 boneless skinless chicken breast – cut into cubes
  • 2 celery stalks – chopped
  • any other vegetables you would like to add
  • 2 blocks of vegetable stock cubes
  • 1 cup of small noodles of your choice
  • salt and pepper to taste

What to do:

Bring a large pot of water to the boil. Throw all the ingredients (except the noodles!) into the pot and let it cook on medium heat for a good two hours before serving. You may add more or less chicken stock cubes for your taste preference. About half an hour before serving, add the noodles to the soup and boil until soft. Serve and enjoy!

So there you have it. The recipe for my famous chicken noodle soup.

One thing to note is that a recipe for soup does not have to be followed to the tee! You can add what you like and however much of it to your likings. When I make soup I normally just eye ball it but I do taste it along the way to make sure its tasty and delicious!
