The. Most. Delicious!
I am in no way a health freak … Very far from actually. But I have decided to start somewhere. For specific health reasons (read: psoriasis) I have started to try eat gluten free and I am trying to be very strict about it. You read hundreds of articles about how bad sugar is and how too much salt can cause a stroke, but they don’t tell you how bad gluten is for our bodies. Especially too much of it.
So together with this new health revelation of mine, I have been very busy in the kitchen trying to replicate some of my favourite things. The other day I made the most delicious gluten free banana and choc chip muffins using coconut flour. This recipe is so easy that anyone can make them. Even the least domesticated.
The one thing that I love about them is the coconut flavour. I think from the coconut flour together with the coconut oil, they taste like coconut biscuits/macarons. Those very delicious ones! Add in the banana and choc chips and you have a really delicious but healthy breakfast or tea time treat.
3 ripe bananas, mashed up
3 tablespoons honey
4 tablespoons virgin coconut oil
1 teaspoon pure vanilla extract
1/2 cup coconut flour
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1/4 cup choc chips
Preheat oven to 180° and grease/line a standard 6 cup muffin tin.
In a large bowl mix together the eggs, coconut oil, honey, vanilla extract and mashed up bananas using an electric beater. Add the coconut flour, baking soda and kosher salt and mix with a spatula until well combined. Then add the choc chips and mix until they distributed evenly. Leave a few choc chips for decoration. The mixture should be thick and soft, like batter.
Divide the batter evenly amongst the 6 prepared muffin cups. Sprinkle choc chips over for decoration. Place in the oven for about 20 to 30 minutes, until a toothpick inserted in the centre comes out clean. Remove from the oven and allow to cool before placing the muffins on a wire rack.
Make a cup of tea and enjoy!
