Is it just me or do you also crave pancakes every morning when you wake up, especially now in lockdown? There is just something so comforting about delicious pancakes especially when drizzled with an extra dollop of Nutella. Or sprinkled with cinnamon and sugar. Or even topped with some berries and honey. The toppings are endless!
At the beginning of lockdown, I googled a recipe for “healthy banana pancakes using coconut flour“. This recipe came up and let me tell you, after a little tweak here and there, they are delicious! I love that they’re on the healthy side because they are made with coconut flour and bananas. There is no sugar and no other nasty stuff! And, another bonus, they are gluten free. Not that I am gluten free, but if you are, these pancakes are a winner!
Here is my recipe for delicious banana pancakes (using coconut flour):
- 2 very ripe bananas
- 2 tsp baking powder
- 2 eggs
- 4 – 6 tbsp coconut flour
- coconut oil for frying
Mash the bananas up until only small bits remain. Whisk in the baking powder until thoroughly mixed through. Next add in the eggs and whisk until well combined. Lastly, add the coconut flour but adding 1 tbsp at a time. The batter must be a scoopable batter that is not too thick.
Grease a pan with coconut oil. Place a crumpet size amount of batter into the hot pan and then cook on each side until golden brown. A little tip for cooking these pancakes is to cook them on a low heat for a little longer than normal and covering with a lid so the centre cooks through.
Once they are ready, plate up and serve with Nutella. Or with fresh berries and honey, or maple syrup and yoghurt – whatever your preference is!
