Five Favourite Things

SPRING IS HERE

Spring is my favourite season and I couldn’t be happier that this season is finally here! I am so excited for all the beautiful flowers to blossom, the birds to chirp a little louder and the glorious sun to get warmer. I cannot wait to spend days outside soaking up all the vitamin D and enjoy long lazy wine filled dinners on the terrace.

SUPERGAS IN COTTON CANDY

If ever there was a pair of shoes with my name written all over them, it’s these beautiful pink Supergas in the colour Cotton Candy. I found them on sale (!) at the Superga store in Sandton City and I knew I had to take them. I cannot wait to wear them all summer!

Superga’s are available on Superbalist

SHOP BOTANICUS

There is a new shop that has opened up in Hyde Park Corner that is a flower lovers dream. It is the most beautiful florist I have ever walked into and because of this, I couldn’t walk out! It is a florist like no other and is definitely going to become my new favourite flower spot.

ABURI SALMON CALIFORNIA ROLL

This is not your average salmon california roll, this is a whole lot more delicious. The brûléed salmon on top takes it to a whole new level. It is just mouthwatering good!

Stay home, stay safe and support your fave restaurant with Uber Eats, like me

It’s a really crazy world out there and the safest (and best) place to be right now is at home. As much as we love being at home, there’s one thing missing. And that’s our favourite meals from our favourite restaurants. We can spend hours in the kitchen trying to replicate that insanely delicious pasta dish from our fave Italian spot, but the end result just isn’t the same, ever! So that’s why we love Uber Eats. Their role in bringing our fave meal from our fave restaurant to our front door is unbeatable. Uber Eats makes staying home and staying safe while still supporting all our favourite restaurants so super easy.

This past Sunday we were craving our normal Sunday lunch at our local Greek restaurant, Soul Souvlaki. I opened up the Uber Eats App, clicked away, and within an hour our selection of Greek Meze was at our front door waiting to be unpacked and laid out. It was a real Sunday treat, in lockdown, to enjoy our favourite food, in the winter sunshine, like we would have at the restaurant.

What’s great with Uber Eats is that we are still able to support all our fave restaurants. We’re able to thank and tip the delivery guy in the app after each delivery. From now until 11 July 2021, delivery will cost you a whopping R0.00 – that’s right – delivery is free. Every day Uber Eats has restaurant specials which makes checking the app every day somewhat exciting. What I love most, especially now, is that Uber Eats deliveries are contactless so when selecting “leave at the door” on checkout, social distancing is 100% ensured! Oh, and one more, Uber Eats lets you “share this delivery” with a friend, a colleague or a loved one allowing you to send food to them and share the delivery tracking details with them. This is a wonderful idea for a virtual dinner date!

Staying in The Cabin at Rosemary Hill

If this year has taught us anything, it is to explore even more of our beautiful country South Africa. This includes little hidden gems and unique places right on our doorstep. One of them being Rosemary Hill, which we recently just visited and am so excited to share more about.

Rosemary Hill is an organic farm situated on the eastern outskirts of Pretoria. Known for being one of the most beautiful wedding destinations in South Africa, Rosemary Hill has so much to offer. The estate boasts numerous unique event venues, a bustling coffee shop and restaurant, 33km trails, and various exciting and unique accommodation options.

Cabinville at Rosemary Hill

One of the very unique accommodation options includes Cabinville which is a collection of pods and a cabin. On our recent visit to Rosemary Hill, we were one of the very lucky few to stay in the newly launched cabin. So being one of the first to stay here, I am so excited to tell you about this one-of-a-kind experience.

The cabin is essentially a container with all the amenities and features to ensure a luxury stay over experience. The cabin is a double-storey unit with a queen sized bed, a bath, a shower, a kitchenette, a dining area and a sitting area. There is also an upstairs balcony turned hammock bed. And from here, you will enjoy the most beautiful views and sunset. No detail is left untouched in the cabin which adds to this unique magical experience.

Food and drink

The cabin has a fully equipped kitchenette including a gas stove and a microwave. But if like us, you forget your groceries, there are 2 restaurants on the estate. We enjoyed the most delicious pizza at the Greenhouse Cafe as well as breakfast at the Coffee Shop. For dinner we enjoyed a picnic basket full of treats on our hammock while watching the sun go down. It was heavenly!

Things to do

Trail run or hike one of the 30km’s tracks. You can choose from 5km, 10km or 33km trails to run, hike or ride.

Go horse riding through the beautiful farm or make use of the professional facilities such as arenas for multiple disciplines, canter track, outrides and cross-country trails.

Be extra adventurous and Acrobranch which is a unique treetop experience for kids and adults.

Book a high tea experience at Rosemary Hill. For R295.00 per person, you can feast on a meat or plant-based menu with sweet and savoury treats.

Collect your picnic box, grab a spot on the lawn or a table and tuck into an assortment of treats. You can choose from a family or romantic picnic package.

Rosemary Hill is a truly unique weekend getaway experience that I am so happy I got to experience. I’ve already made a note in my 2021 diary to visit Rosemary Hill and stay in the cabin during the winter next year. I cant even imagine how absolutely cozy and romantic this would be!

Easy and delicious homemade beef lasagna

For the longest time I have been wanting to make homemade beef lasagna. I have been craving that traditional yet simple lasagna with layers of pasta, béchamel sauce and tasty bolognese. So in the holidays I found this recipe and decided to give it a try. Since then I have already made it 3 times. That means it’s really good and so easy – hence, the need to share it with you. This lasagna pairs well with a delicious red wine, especially on a cold night now that winter is approaching.

HOW I MAKE IT:

Bolognese

In a large pot, I add the olive oil, mince, carrots, celery, onion, garlic and salt. I let this sauté until the mince is nice and brown and there is no liquid (from the mince) left at the bottom of the pot. I then add the two tins of Italian crushed tomatoes, water and spices. I let this cook on a low heat for as long as possible, until nicely thickened – maybe for 1.5 or 2 hours. I do regularly stir the mince and add more water if necessary.

Béchamel Sauce

When the mince is nearly ready, I make the béchamel sauce. In a smaller pot, once the butter is melted, I add the flour and salt, and whisk to combine. Once combined, I slowly add the milk and keep stirring until thickened. Once nice and thick, I remove from the heat.

To layer

In a medium sized baking dish, I start off by first spreading 2 to 3 spoonfuls of bolognese sauce on the bottom of the dish. I then place a layer of lasagna sheet noodles, then top with bolognese sauce, white sauce, grated mozzarella cheese and parmesan cheese. I did three layers like this. The very last layer I do is bolognese with grated mozzarella cheese and parmesan cheese on top.

Cook:

Preheat the oven to 180 degrees Celsius. I cover the lasagna with foil and then let it bake in the oven for about 3o minutes. I then remove the foil and allow to bake and get crispy on top for another 10 minutes. How do we know when it is ready? When a knife can easily be inserted – that means the pasta is cooked!

I find this recipe to be relatively easy. For the exact recipe with quantities, click here. Instead of tomato puree, I used Italian crushed tomatoes. I also didn’t follow exact measurements, and instead eye balled the amounts.

Enjoy your homemade beef lasagna with a glass or two of red wine!

Tau Game Lodge in Madikwe

Lying in bed and as I look out the window, I see a herd of wildebeest and a dazzle of zebras hanging out at the waterhole quenching their thirst. I close my eyes for a quick 20 minute nap and as I open them to look out, I see one lonely elephant approaching for water. I didn’t know if I was still dreaming but it felt like the elephant was about to walk through the fence and into the room. So I quickly got up, got dressed and went outside. To watch my favourite animal, up close, in its natural habitat, without any disturbances, was just magic. I kept having to pinch myself because I really thought I was still dreaming.

Welcome to magical Tau Game Lodge in Madikwe!

Tau Game Lodge is a luxury South African safari lodge situated in the malaria free Madikwe Game Reserve. I have visited many safari lodges and game reserves in South Africa, but when I say there is something truly special about Tau and Madikwe, I mean it. The lodge itself, the location, the setting, the food and the standard of service. Together, all of these things ensure a truly special and absolutely magical safari experience.

What is a day at Tau Game Lodge like …

A summers day at the lodge looks a little something like this. At 5am we receive a wake up phone call from our game ranger. By 5:15am we all meet in the dining room for a quick cup of coffee and a muffin. 5:30am we’re on the open Landrover vehicle ready to head out and search for animals. By 9am we’re back and breakfast is served. After breakfast we can do whatever we please, until lunch at 1pm. At 4pm we all meet again for an afternoon cup of tea and freshly baked treat and by 4:30pm we’re back on the vehicle ready to spot more animals and watch the African sun go down. We return back to the lodge for dinner at 8pm.

The days seem full but if we’re not searching for animals, then we’re eating. In between all of this we chose to nap, swim in the beautiful pool, or visit the spa for a treatment. This is definitely relaxation at its peak.

Food food food

The food at Tau Game Lodge is definitely something to write home about. What stood out the most for us was the attention to detail at every meal time including tea time. Every little detail was well thought of and every dish deliciously created. Each night we enjoyed a different dining experience. One night we enjoyed dinner under the stars around a traditional outdoor African Boma. And the other night we enjoyed dinner in a cozy intimate setting in the dining room. Both though were wonderful dining experiences.

Meaning of Tau

Tau means lion. It just so happened that on our last evening as we got back to our room after dinner, we heard the overwhelming sound of a male lions roar. They say a lions roar can be heard for up to 5 miles away, so this lion definitely wasn’t nearby, even though it sounded like it was.

Tau is a truly special place and it was an absolute privilege to experience this little piece of African paradise. Everyone who visits Tau say they can’t wait to return. And as we drove out the gates to leave, we said the same thing. Tau will definitely see us again – hopefully sooner rather than later.

Why we need to support local restaurants (especially during these times)

It’s a Monday, I’m sitting at my desk swamped with work and it’s nearing lunch time. My fridge is a little on the empty side, I have no desire to have toast with peanut butter, and I’m reminded why it is more important than ever to try support my local owned restaurants. Before I get sucked in by a few more emails, I remember Momo&O is on the Uber Eats App. So I bring out my phone, open the App, click away at a few prompts, select “leave at the door” and not even an hour later I open my front door and I have the most delicious lunch ready to be eaten. With service like this it feels like we’re living in another world, but actually we’re not, it’s just Uber Eats is ahead of the times!

Some of my other favourite local restaurants on the Uber Eats app include Ribs and Burgers (the best burgers in South Africa, seriously!), Tashas for a quick delivery of a delicious slice of cake when that afternoon tea time craving strikes, and Mezepoli for a selection of Greek meze to accompany a bottle of wine over the weekend. Momo&O though is my go to for all Asian inspired food – from sushi, to bao’s and bowls.

Features of the App

With Uber Eats, it’s really so easy to get your favourite food delivered to your door in a matter of moments. It’s because of this that I use the App religiously during the week (no judging please, I do cook also!). A few other key features of the App alongside this is you can schedule orders to be delivered at a time more convenient to you. You can customise the drop off to your home, office or even a park. You can track your order and watch in real time your food being prepared, picked up and delivered to your door. My favourite feature, especially during these times, is contactless delivery which means your meal will be left at the door. And I also love the in-app chat option.

Uber Eats also always has great specials! So get your favourite meals while supporting the local smaller restaurants you love with help from Uber Eats:

  • R70 for any local faves: For 11 days [26 April – 2 May] you’ll get the best sellers from the best in your neighbourhood and only pay R70.
  • T&C’s: Available on selected restaurants only, restaurant selection and associated specials varies per day. Valid for new and existing Uber Eats users in South Africa only.

Rice Krispie Treats with a secret ingredient

1

Rice Krispie Treats are the epitome of childhood memories. We would always have them as an afternoon treat. Birthday parties weren’t the same without a tray full of them! And, they were a standard snack in our school lunchboxes. I forgot all about these sweet treats until the other day when I felt like something deliciously sweet. The first thing that popped into my head was Rice Krispie Treats so I googled recipes and this one came up which uses a secret ingredient. This secret ingredient definitely takes these treats to a whole new level of sickly sweet deliciousness. And, if you have a sweet tooth like me, it will definitely be satisfied!

The secret ingredient is: CONDENSED MILK!

Here is the recipe for Rice Krispie Treats with condensed milk:

INGREDIENTS

  • 1/2 cup unsalted butter
  • 1/2 cup sweetened condensed milk
  • 500g of marshmallows
  • 1 tsp fine sea salt
  • 6 cups Rice Krispies
  • 100’s and 1000’s sprinkle

INSTRUCTIONS

  1. Grease a baking tray with cooking spray or softened butter.
  2. Place the butter in a large pot on the stove and melt it over medium heat. Add the sweetened condensed milk and stir with a rubber spatula, for about two minutes, until the butter and condensed milk are uniformly combined.
  3. Add the bag of marshmallows and stir until melted and smooth. Add a sprinkle pf salt and stir again.
  4. Off the heat, add the Rice Krispies to the marshmallows and stir to combine.
  5. Transfer to the prepared pan and press down lightly with a sheet of plastic wrap – you do not want to pack the Krispie treats down or they will lose their inherently soft and gooey texture). Sprinkle with 100’s and 1000’s on the top.
  6. Let set up on the counter for at least an hour. Cut into little squares and serve.

My everyday healthy breakfast smoothie

Breakfast smoothies are a very important part of my weekly routine. I stopped making them for a while but now I am happy to say, I am making them (nearly!) every morning again. You can read why in this blog post. I love adding various fruits and vegetables. This is the best way to get in a whole lot of greens and fresh fruit first thing in the morning. They are so easy to whip up in under 5 minutes and they really do keep my full until lunch time.

This is my basic recipe I follow which really gets the day started. What I love is that you can jazz it up with anything extra you so desire. You can replace the spinach with kale. Or use fresh fruit or frozen fruit for that extra delicious iciness. You can add chia seeds and flax seeds. The peanut butter adds protein and the banana gives it a sweet taste and a creamy texture.

Whip this up tomorrow morning and you won’t be disappointed – not only by the taste but by the nutritional wholesomeness.

Peanut butter and banana green smoothie

Ingredients:

1 to 2 cups baby spinach

1 banana

Small tub of plain yoghurt

1/4 cup oats

1 green apple chopped up

30 ml peanut butter

Combine everything into a high powdered blender – I use my good old pink NutriBullet. Blend for 60 seconds. After 60 seconds, add a few pieces of ice and continue blending for an additional 30 seconds. Serve immediately.

How I plan to be a bit healthier this year

0

Let’s be honest – 2020 was the worst year, ever. Well for me personally it was. I started off the year so positive with such a healthy routine which then dwindled to non existent. By the end of the year, my exercise took a backseat, I stopped reading and I was eating all the comfort food. This year, I plan on changing all of this and getting back into a healthier, wholesome and happy routine. That’s why I’m documenting all of this in a post, so I feel extra accountable. And also, so that I can inspire at least one of you to get back onto a healthier 2021 bandwagon. So this is what I plan on doing …

  • Get back to doing 10 000 steps a day.
  • Do a 5km walk on Saturdays because I miss doing the Parkruns so much.
  • Drink more water everyday.
  • Drink more herbal teas throughout the day like rooibos tea and green tea.
  • Cut down on caffeine.
  • Read everyday.
  • Surround myself with good people that care.
  • Have a green smoothie\juice everyday.
  • Have vegetables with every meal even if its a salad.
  • Practice more self care!

How to make the very famous baked feta pasta

0

There is good reason the baked feta pasta dish went viral on TikTok and Instagram. It is absolutely delicious! It is creamy, flavourful and so easy to make. All you need is cherry tomatoes, feta cheese, garlic, basil, seasoning and pasta! You all know how much I love my pasta, so when I first saw this pasta dish on Instagram, I just knew I had to try it.

How to make baked feta pasta:

  • Using an oven proof baking dish, add cherry tomatoes (I also used some chopped tomatoes), olive oil, salt and pepper. Mix this all to combine well.
  • Add a block or two of feta cheese to the centre of the baking dish. Drizzle olive oil and salt and pepper over the feta cheese.
  • Bake this in the oven until the tomatoes burst and the feta cheese looks melted and is deliciously brown on top. The smell will be heavenly!
  • As soon as it comes out of the oven, add some fresh minces garlic and freshly chopped ip basil leaves.
  • Mix this all around immediately so the garlic soften from the heat.
  • Add the cooked pasta on stop and give everything another good stir. The feta and tomatoes will create the most delicious sauce for the pasta!
  • Dish up and enjoy!

My tips for making baked feta pasta

  • Use the freshest ingredients possible. With such few ingredients, it was easy to pop into the shops and grab these ingredients quickly. Normally we always have cherry tomatoes, normal tomatoes and feta cheese in the fridge as we regular salad eaters and these are our standard salad ingredients. I just needed basil and garlic!
  • Save a bit of the pasta water and add it to the sauce. Every time I make pasta at home, I always save a bit of the pasta water to use in the sauce. And with this pasta, I did the same. This prevented the pasta from being too dry and made the sauce extra smooth and creamy.
  • Use a lot of tomatoes! Don’t be stingy with the tomatoes as they make up the majority of the sauce.
  • Don’t be stingy with the garlic and the seasoning. I by mistake had a very heavy hand with the garlic so the sauce was very garlicy but so good!
  • You can use any kind of pasta.

I cannot wait to make this again but with burrata cheese!
